For a couple of weeks now I did not cook anything except of water for tea. One of the last things was a delicious oven fried sweet potato marinated with smoked paprika, olive oil and sea salt and I do and will cook some (sprouted) Quinoa from time to time and finish the rice, chickpeas and whatever is left.
A funny thing is so many people first think of Hummus, when they think about vegan food. Luckily I can show that there is much more and can also be much less than you think you would need. I did not cook Hummus for about 3 months now and do not feel any cravings for it. On one hand side it is a lot of work and much to clean and I often feel bloated afterwards because of the high amount of fibres and carbs.
My food MUST be
- nutritious
- delicious
- local
- cheap
- efficient
- easy to digest
- quick and easy to prepare (on travel)
- sold anywhere
- storable
Do not think to much on all the details like I just did. Lets say delicious, healthy and easy are the most important bullet points.
The paradox of cooking
A couple of decades and centuries ago it could have made a lot of sense to cook and there might still be places in the world where it makes sense somehow, but anyway neither me nor you will ever find out the truth so lets continue.
If you cook you need energy (heat) to destroy energy or nutritions inside the food but it helps to preserve several things and also lets say „activates“ some secondary plant compounds in a few products and of course makes some poisonous things digestible like potatoes or eggplants.
The main thing is you waste a lot of energy or what’s most important to me is: the food is worth less, so I have to spent more time on cooking and eating, I have to eat more, pay more and clean more. So a few months after I became 99% „vegan“ (July 2019) I realized I will probably eat just or lets say 99% raw food some day and for the rest of my life.
If you think this has ever been planned you are wrong. When I was young I did not eat any greens except of spinach and no salad, almost no veggies until it was almost just fast food some day. At the grand opening party at Radisson Blu Hotel Zürich Airport in 2008 or 2009 for 2 days I mostly just ate lobster with mayonnaise. For about 2 years in my life I had a steak Friday and as a chef you sometimes just eat meat with meat because you like it. This will definitely never happen again and I hope if you are like I was you see my mistakes and learn from them now.
So my end of searching for the most healthy and delicious food logically had to end with raw vegan sugarfree glutenfree alcoholfree food. If I had to choose 1 reason it is timesaving and thats why I suggest you to stop cooking (at least regularly).
What I eat every day
Breakfast
- 200 ml herbal/green tea mix
- 50g wild herbs
- 50g berries
- 3-5 paranuts
- 1 banana
- 1 piece frozen cale
- 1 piece frozen spinach
- 1tsp seeds (mostly flax)
- 1/2 red beet
- leftover fruit and veggie cuttings
- (ginger, curcuma)
Supplements: OPC, Vitamin D3 + K2 oil as mentioned in my daily routine
Sweet dish (sometimes eaten twice)
- 100g wild blueberries
- 100g Sojajoghurt (homemade 😉
- 50g fresh ground seeds (hemp, chia, flax)
- 50g buckwheat sprouts
- 50g (soja) flakes
- 4 chopped dates
- 2 chopped figs
- 1 babana
- 1tbs (sprouted) sweet lupine powder
- (seasonal fruit)
- some Vanilla or tonka bean
This is perfect to prepare for a journey. Take a spoon with you.
Salty dish (eat as much as you can)
- 200g veggies cut in julienne
- 150g wild herb pesto
- 50g wild herb salad
- 150g mixed sprouts (buckwheat, sunflower, lentils, Azuki beans, sweet lupine, broccoli, alfalfa, cress, chia, flax, radish…)
- (100g Quinoa)
- sometimes I add some chickpea or tortilla chips if I need some crunch
Be prepared to chew a lot and train all your mouth region.
Pesto recipe
- 150ml cooking (olive) oil
- 100g wild herbs
- 50g nuts and or seeds
- 1tbs sea salt
- 1tbs smoked paprika
- 1tbs shiitake power (or 2 champignons)
- pepper, nutmeg (oregano, thyme, parsley,…)
- 50g yeast flakes added at the end
- 50ml native oils (flax, sesame, hemp) ->DO NOT BLEND
Sometimes I buy some tortilla chips and eat them with pesto as a snack. I will soon try to make my own out of corn and flax seeds, which should be very easy and I can spice them up as I want it.
The full journey was not told and for me this seems to be the way it should be. My journey to find the most healthy and delicious food was hard but lets focus on the positive thing. It seems to be over now and except of writing a cook book it is done in one article. You now have the choice if you want to follow. Look at me now and look where I came from.
